ACTION PLAN for SUSTAINABLE RESTAURANTS

Dear cooks and chefs of Terra Madre!
Here comes the Action Plan as promised at the Earth Workshop called
Restaurants in Sustainability held during Terra Madre 2008.
I also would like to THANK all participants that made my job as a
first time moderater smooth as butter! THANK YOU!!

ACTION PLAN FOR LOW-IMPACT RESTAURANT SYSTEMS

Define your gastronomy values, good clean and fair. 

Communicate values, actions and events.

Buy local, in season products.
Create relationship-based networks. 

Plan menus, shopping & separate garbage.
Try to integrate your restaurants with the community.
Introduce more plant-based food and less animal-based food in your menus.

Work on creative cooking – cooks are also cultural promoters.
Increase awareness and educate guests, influential people & staff.
Look for and show good examples.
Consistency brings respect, attention and business.
Believe in change and take responsibility.
Adopt a school, co-work with a local producer.
Join the Slow Food/ Terra Madre Chef Day on the 11th of November!
